OVEN BARBECUED SWISS STEAK.

2 lbs. Venison Round Steak cut into 1" thick strips
1/3 cup flour
1 tsp. salt
1/2 tsp pepper
1/4 tsp. each, dried rosmary, oregano, parsley, cilantro
2 cups seasoned tomatoes
1 TBS. sugar
1 TBS. vinegar
Worcestershire sauce to taste
1 med. to large onion, sliced

Combine flour, salt, and seasonings; coat meat with this mixture. In dutch oven, brown meat slowly on both sides in hot shortening. Drain off any axcess fat.

Combine tomatoes, sugar, vinegar and worcestershire sauce; pour over meat. Simmer 5 mins. add onion. Cover and bake at 350 for 1 1/2 hours or until meat is tender.

I like this dish with Homemade cornbread or steamed Broccoli.

TURKEY WITH ORANGE SAUCE


1 10 lb. wild turkey, dressed
3 oranges, unpeeled
1 large onion
2 TBS. olive oil
salt and pepper
1/4 tsp. dried oregano
1/4 tsp. dried rosemary leaves
2/3 dry white wine
1/2 cup butter, melted
1 clove garlic, minced
1 chicken bouilion cube

Dice one unpeeled orange, and onion, mix in bowl with olive oil, salt, pepper, oregano and rosemary, fill cavity of bird with this mixture and roast at 325 until bird is done. Baste turkey
while roasting with mixture made by combining wine, melted butter, juice from remaining two
oranges, garlic, bouillon cube, and salt and pepper to taste. Heat mixture to dissolve bouillon.
Discard stuffing before serving.
